This sensitive, dry white wine is made from a grape called Gutedel (rhymes with organic product scoop), a.k.a. Chasselas in Alsace and Switzerland. It is said to be the world's most antiquated assortment. Gutedel's smooth mouthfeel and nutty character make it a brilliant mixed drink wine, a flexible accomplice for light fish dishes, and a great backup to cheddar all in all and cheddar fondue specifically.
